IN PAN 2 CUPS SUGAR
1 CUP LIGHT CORN SYRUP
1 1/2 STICKS OF BUTTER( or 1 cup)
STIR AND BRING TO A BOIL.
AT 280* degrees add 2 cups chopped peanuts
Cook and stir constantly until it reaches hardcrack stage.(.305*)
Remove from heat and add 2 teaspoons of baking soda. Stir This will foam up quickly.
Pour onto buttered pan. Let harden. I flex the pan to break it loose. Parchment paper is great instead of buttered pans. Remember to stir constantly when it starts boiling. Hope it does good for you.

Hhhmm - hubby looked over shoulder at Lara's post and said Yum - Peanut Brittle - Thanks for the recipe - I need Christmas presents for him and we have all the ingredients. Do you use salted peanuts or fresh from the shell (we are in the south where they are grown).

MMMMMMM pecan brittle is very good, as well. I have never made it, bought some from "WE'RE NUTS" in Vienna, GA on our way to Florida a couple of years ago...now I just order it online from them http://www.werenuts.com/shop/product.da/b-760-pecan-brittle-12-oz They also have yummy glazed, praline and sugared pecans. Kind of $$ but well worth it. This peanut brittle recipe sounds very good and easy. Thank you Linda.

I have never used anything other than peanuts. I get the unsalted peanuts in a jar. Pecan brittle sounds good though. Peppermint bark is a good gift and just takes 2 ingredients. I also mix a tea concoction and its very good. If anyone wants the ingredients, let me know. Also German chocolate upside down cake is to die for.
Hope you all have good luck with the brittle.

that is the same recipe I use. I use raw peanuts that come in a bag. Never thought of using anything else the other would be easier to find. Thanks I will have to try it but yes this is the best recipe ever. God Bless
